I was going to go with basic chocolate chip cookies, but decided to try this chocolate chunk cookies recipe and it’s not all that bad. It does lack the sweetness due to no regular sugar, but they are still pretty darn good!
- 3 Eggs
- 1 Cup vegetable oil
- 3/4 Cup packed brown sugar
- 1 Teaspoon baking powder
- 1 Teaspoon vanilla
- 1/4 Teaspoon baking soda
- 1/4 Teaspoon salt
- 2 1/2 Cups all-purpose flour
- 1 Package 12 ounce semisweet chocolate chunks
Preheat the oven to 350°F and lightly grease the cookie sheet or line it with parchment paper.
Beat eggs in a large bowl until foamy. Ad oil and brown sugar; beat until light and frothy. Blend in baking powder, vanilla, baking soda, and salt. Mix in flour until dough is smooth. Stir in chocolate chunks.
Shape the dough into walnut-sized balls (or drop). Place 2 inches apart on cookie sheet(s).
Bake 10-12 minutes or until lightly browned. Removed from cookie sheets to wire racks for cooling.
