Not sure what to do with the box of Orzo you have in the cupboard? You could mix it with some Sweet & Spicy Tuna or you can try out this new recipe! This is a super easy recipe and I found that you can add additional cheese to your liking.

Cheese Broccoli Orzo

How do you make broccoli better? Well, add some cheese to it and mix it in with some Orzo! Delicious as a side dish.

Recipe is adapted from Iowa Girl Eats.  I added additional cheese to our recipe, whole milk, and no salt.

Cheese Broccoli Orzo

Ingredients
  

  • 1 cup Orzo
  • 1 cup chopped broccoli florets I used frozen broccoli that I thawed before adding it to the Orzo - use more or less to your liking
  • 1/2 cup Cheddar cheese shredded
  • 4 tablespoons Parmesan cheese shredded
  • 1 tablespoon butter
  • 1/2 cup milk

Instructions
 

  • In a medium sauce pan bring a pot of water to a boil.
  • Add Orzo and cook for 3-4 minutes.
  • Add broccoli and cook for an additional 2-3 minutes.
  • Drain Orzo & broccoli and return to pan.
  • Add milk, butter, and cheeses and mix.

Remember, you can always adjust the recipe to your own liking, just like we did. Add more cheese or broccoli to the Orzo. Or less if that is your preference. You can even try other vegetables if you’d like.
